Erin Meadows is a wife and mom living in Westfield, Indiana. Her older son, Henry, was diagnosed with Celiac Disease in 2020 after months of suffering from various symptoms. Celiac Disease is genetic, so she asked for a blood test which came back positive - giving her the reason behind years of her own symptoms. This prompted the family to begin lifestyle changes and begin eating a gluten free diet.
