About The Author

Mimi grew up in Chicago, IL. She started skiing at two years old, and has always had a love for the mountains. Pursuing a career as a competitive snowboarder in her teens, Mimi missed a lot of school traveling. Baking cookies was something she did frequently to keep in good standing with her teachers. At 17, Mimi graduated early from high school and immediately drove cross country to live in the beautiful mountains of Mammoth Lakes, CA. After living in the mountains for a year, she landed a job at a leading action sports company in Huntington Beach, CA. Mimi stayed with Roxy for over five years, but layoffs were constantly happening. Luckily, she never got laid off, but it made her realize her true passion for baking. She quit her corporate job, and traded in all her savings for a small, yet charming, bakery location back in Mammoth Lakes. Mimi’s Cookie Bar opened in September 2011, and has been growing ever since. Their first book, Mimi’s Cookie Bar – Organic Cakes & Cookies reflects the organic lifestyle that Mimi lives. And, it includes some of their best sellers in the bakery, along with brand new desserts that are soon to be favorites.
