Description

What do you learn in a professional kitchen? Simple lessons that last a lifetime. In twelve reminiscences distilled from her experience as prep cook and line cook in one of New York's most popular restaurants, Margot Mustich reflects on the challenges she faced and the rewards that linger even now, decades later. You Can't Rush Onions is a book that will intrigue anyone who is curious about what happens behind restaurant kitchen doors. It's not just about technique, it's about survival, too, in a highly competitive, often chaotic milieu that taught the author much about cooking—and a lot more about life. A dozen essays and one recipe. Illustrated with photographs by the author.

About The Author

After working in consumer advocacy, film production, and publishing, the author finally found the courage to hang up her Ann Taylor suits and throw herself into cooking full-time. Her first job was in a gourmet takeout and catering business in Westchester, NY. Next, she apprenticed with the executive chef of a private club in Manhattan. Her third and last full-time cooking job was in the kitchen of Union Square Café. Since then, she has raised a family, taught cooking classes, collaborated with her husband on his book, 1,000 Books to Read Before You Die (Workman, 2018), and written and self-published a cookbook, Simple Pleasures: Cooking from the Heart. Her first children's book, When Grandmas Cook, was released in 2024.
