About the author
On a leap of faith, Mina Grace left California during the height of the pandemic to live on a remote island in the heart of the Philippines. She's Momma to four grown sons and Grammy to one. She's also the impassioned plant-based Graves' Disease Chef and social media influencer behind @breakingdailybreadwithMina. She's a lifestyle and health food columnist for Tangled Silver Magazine, a magazine for women by women, who've embraced the beauty of aging and their natural hair color. Her featured column "Silver and Salt" is where she shares many of her tested and perfected plant-based recipes that contributed to her health and wellness, after having suffered from Graves' Disease for so long. In her former life, before retirement, she enjoyed a colorful and illustrious career in politics - interviewing and working with three U.S. Presidents, Cabinet Secretaries, a movie star Governor, Senators, and Dignitaries. She was Editor-in-Chief and Publisher of nationally awarded, California Schools Magazine – seven years in a row. Mina is passionate about cooking for Graves' Disease and sharing creative, often unconventional plant-based dishes from around the world that brought her to healing and eventually remission.
