The recipes in this book were originally compiled for one of our clinics. The medical professionals were constantly treating patients who needed and often requested diets because they were overweight and suffered from other threatening health conditions.
The clinic professionals knew that diets don't always work…in fact rarely work. We decided to emphasize healthy eating habits rather than counting calories. We prepared and provided to our patients a complimentary copy of this cookbook to encourage different food choices changes that would lead to healthier eating. This was a "twofer". Patients would lose weight and get and stay healthier.
Patients found it a relief not to worry about counting every gram, calories, and type of food they were consuming, rather to simply prepare a recipe from the book they thought they would enjoy. All the recipes offered healthy eating choices without being high in calories.
We ask the reader/cook to concentrate on healthier eating by making food choices rather than calorie counting. In fact, portion control can often be more important than calorie counting.
