It is NOT a diet, but if you have been struggling to lose weight and you take the HueChallenge described at the back of this book even for 2 weeks, you will begin to substitute your snacks and side dishes with colorful vegetables. During this time, you will not only begin to notice improvements in your energy levels and weight, but more importantly, you will be on your way to fool-proofing yourself against chronic disease (coupled with regular physical activity of course!).

Monica H. San Miguel, HueTrition Founder A dedicated advocate for children's well-being with the goal of teaching kids a healthy life-style from an early age. She is a mother of 2 children who knows the importance and challenges of raising healthy kids. She has a B.S. degree in Nutritional Sciences and an MBA with a concentration in Marketing & Management Strategy. She also has completed PhD Marketing coursework focusing in Healthcare Services. She is a certified Personal Trainer by the National Strength & Conditioning Association since 2001. She is a life-long athlete and was an NCAA Texas A&M University Intercollegiate Women's Tennis Team Member and Captain. She has been a Child Nutrition Supervisor of nine elementary campuses and is well aware of the all challenges in nourishing young children in the K-12 segment. She is a Marketing Professional with over 15 years of combined experience in the Food Industry & the Natural/Organic/Functional Products. Her areas of expertise include: Better For You, Marketing Strategy, Innovation Platforms/New Product Development, and Brand Management. Other past honors include: Texas A&M University Diversity Doctoral Research Fellowship, Ford Motor MBA Company Fellowship, Intercollegiate Tennis Association Scholar-Athlete, First Team Academic NCAA All-Big Twelve College of Agriculture and Life Sciences Senior Merit Award.
